Trained in hospitality, before entering the kitchen the Galician Carlos Villar spend a year working at the A Coruña fish market to get to know the secrets of fish. After working at Espai Sucre, Santi Santamaría, Roig Robí and Casa Marcelo he took to Santa Cruz in Tenerife where he opened the famous La Posada del Pez, a reference in Atlantic cuisine and the fish and seafood from Galicia and the Canary Islands. In 2017 he created Abikore, an eatery that looks out onto the sea, and that is what its gastronomic offerings are based on. He has undertaken this project with chef Tadashi Tagami, who worked with the greats of Japanese cuisine and received a Michelin Star for the restaurant Kazande in Tenerife.
Carlos Villar is characterised by his rigorous seasonality, the market and the freshness of the raw ingredients, both those in the Canary Islands and the quality of the products from the Galician sea. His dishes are pure Atlantic raw ingredients with Asian tradition and subtle creativity.
