Historical Gastronomy (Arquegastronomia) is a project promoted by the town council of Vimianzo (A Coruña), in which the archaeological research surrounding the production and elaboration of the food in prehistoric, Roman or medieval settlements in the municipality act as a foundation to develop recipes, events and themed menus in hospitality establishments in the area. One of the examples of this line of work is the pinchos Irmandiños events every July. These coincide with the Festa do Asalto ao Castelo festivities and involve almost 20 establishments offering tapas based on recipes, techniques and produce available in the area in the Middle Ages. After 11 editions it has been consolidated as one of the most popular gastronomic events in the province.
